Anna Polyviou's Cookie Dough S'Mores

It’s so simple – just place the dough in a skillet or another flame-proof dish, and place on the barbecue for 10 minutes. FInish it off with marshmallows, caramel sauce and ice cream – this will be a crowd pleaser!"

Ingredients
1 tub (450g) Triple Chocolate Anna Polyviou Cookie Dough
50g mini white marshmallows
Vanilla bean ice cream
Caramel sauce
Method
- Preheat a barbecue to medium-high. Place a heat-proof rack over the centre of the hot plate (this will stop the cookie from burning on the bottom).
- Place the cookie dough into a skillet or flame-proof dish (I used an 18cm square skillet) and press into the corners to create an even layer.
- Place the skillet on the elevated rack. Close the lid and bake for 8-10 minutes until golden. Carefully remove from the barbecue using oven mitts, and scatter mini marshmallows on top.
- To serve, place the pan in the center of the table and serve with ice cream and caramel sauce for an extra delicious finish.
