Anna Polyviou's BarbeCURE® Pikelets

- 3/4 cup (185ml) milk
- 1 egg
- 1 cup (150g) self-raising flour
- 1 tbsp caster sugar
- Butter (for cooking)
- Cream and jam (to serve)
Prepare the Batter: In a mixing bowl, whisk the egg and milk together until combined.
Add the self-raising flour and caster sugar, whisking until you have a smooth batter.
Heat the BBQ: Preheat the BBQ flat plate to medium heat. Lightly grease the surface with butter.
Cook the Pikelets: Spoon tablespoons of batter onto the BBQ plate, leaving space between each pikelet.
Cook for 1-2 minutes or until bubbles appear on the surface. Flip and cook for another minute until golden brown.
Serve: Transfer the cooked pikelets to a plate. Serve warm with cream and jam.
