Gary Mehigan's Charred Green Vegetables with Wasabi Dressing & Sesame

Serves 4


Ingredients

  • 1 bunch broccolini

  • 150g flat beans

  • 1 bunch asparagus

  • Olive oil spray

  • 4 spring onions, white part finely chopped, green part thinly sliced

  • 100g snow peas, thinly shredded

  • 50 g daikon radish thinly sliced

  • 2 tsp mixed sesame seeds, toasted

  • Flaked salt

  • Black pepper

Wasabi dressing: makes 2/3 cup

  • 1 tbs mirin

  • 2 tbsp Greek yogurt

  • 3 tsp wasabi paste

  • Juice of 1 lime

  • 2 tsp sesame oil

  • 1 garlic clove, crushed

  • 2 tsp sesame seeds

  • 2 tbs white soy sauce

Method

  1. Lightly spray the broccolini, beans and asparagus with the oil and season. Preheat a BBQ or chargrill over medium high heat. Cook the vegetables for 2-4 minutes until charred all over and just tender. Remove onto a plate and allow to cool.

  2.  Meanwhile, to make the wasabi dressing, combine all the ingredients in a bowl and add the white part of the spring onion and set aside until ready to use. Arrange the broccolini, beans and asparagus in a serving bowl.

  3.  Combine green part of the spring onions, daikon and snow peas and arrange over the grilled greens. Drizzle dressing over salad and serve immediately.
