Lyndey Milan's BarbeCURE Veggie Skewers

Add colour to your BBQ with these BarbeCURE Veggie Skewers which will suit all ages and please vegans, vegetarians and ominivores alike. Use any vegetables in season or which your guests will enjoy. Get the kids involved – they love skewering cherry tomatoes!

Serves 4 sides or 2 mains

Preparation 15 minutes + 15 minutes soaking skewers

Cooking 10 - 15 minutes

Ingredients

  • 1 medium red onion, cut into 6 wedges, then pulled apart
  • 2 medium zucchini, sliced
  • 1 red capsicum, cut into 1.5 cm pieces
  • 1 yellow capsicum, cut into 1.5cm pieces
  • 1 green capsicum, cut into 1.5cm pieces
  • 12 button mushrooms
  • Extra virgin olive oil
  • Balsamic glaze

Method

  1. If using bamboo skewers, soak 4 – 6 skewers (depending on size of veggies) in cold water or freeze for 15 minutes. Pre-heat BBQ to medium-high.

  1. Skewer the vegetables, beginning with a mushroom, then alternately the red onion, zucchini, the different colours of capsicum and finishing with a mushroom. Brush with oil and place on the pre-heated BBQ.

  1. Cook for approx. 5 minutes each side or until vegetables are just soft and brown around the edges. Brush with balsamic glaze in the last couple of minutes so it doesn’t burn.
