Vegie Delights Smokey BBQ Burger with Chipotle Mayo and BBQ Corn

Ingredients

  • 1 packet Vegie Delights Smokey BBQ Burgers

  • 2 cobs fresh corn, husks removed

  • 2 teaspoons extra virgin olive oil

  • 4 lettuce leaves

  • 1 avocado, peeled and sliced

  • 4 wholemeal/wholegrain burger buns, sliced in half

Chipotle Mayo

  • 1 1/2 tablespoons (30ml) chipotle abodo sauce

  • 1/2 cup (125ml) mayonnaise

  • 1/2 tablespoon (10ml) lime juice

  • 1/4 teaspoon dried oregano

Method

STEP 1: Heat bbq to medium high heat.

STEP 2: Prepare the chipotle mayo by combining all the ingredients in a small bowl, and mixing. Set aside for further use.

STEP 3: Drizzle corn with extra virgin olive oil and place on bbq to cook 6-8 minutes, turn frequently so they do not burn.

STEP 4: Add Vegie Delights Smokey BBQ Burgers and cook according to instruction.

STEP 5: Once both corn and Smokey BBQ Burgers are cooked, remove from bbq and cut the corn from the cob.

STEP 6: Layer avocado across the base of the bun, top with lettuce, Smokey BBQ Burgers, chipotle mayonnaise, corn, burger bun top and serve.
