Adam Moore's BBQ Fairy Bread Pavlova

Ingredients

8-10 egg whites, at room temperature

200g caster sugar

1 tsp white vinegar
-
1 tbsp cornflour
-
3 tsp vanilla essence
-
500ml thickened cream
-
10g icing sugar
-
4 pieces toast, slightly buttered and cut into triangles

80g white chocolate, plus 20g extra
-
100’s & 1000’s (rainbow sprinkles/nonpareils)
Method

Using an electric mixer and a large stainless steel or glass bowl, beat the egg whites at medium speed for 3 minutes, or until soft peaks form.

While still beating, gradually add the caster sugar, a tablespoonful at a time. Once all the sugar has been added, beat until the sugar has dissolved. To test if the sugar has dissolved, rub a little of the mixture between two fingers – when you can no longer feel the sugar granules it is ready for the final ingredients.

While the beater is still running, add the vinegar, cornflour and vanilla, and beat for a further 30 seconds to combine.

Prepare the barbecue for indirect cooking over very low heat (100°C–120°C) ideally two burners on low and lid down

Line a pizza-serving tray with baking paper, or use a baking pan or cake pan if you want high round sides. Spoon the meringue mixture onto the tray or pan and shape to about 25cm diameter.

Place the pavlova tray/pan on a wire cake rack sitting over the barbecue grill. Bake on indirect very low heat, with the lid closed, for 1½ hours or until the pavlova is dry to touch. Turn the barbecue off and leave the pavlova to sit in the barbecue for at least 15 minutes.

While the pavlova is baking, make the whipped cream. Beat the thickened cream and icing sugar until firm peaks form. Cover and refrigerate until required.

Microwave 80g white chocolate in a heatproof cup for about 60 seconds, or until chocolate is melted. Dip the toast corners into the white chocolate and place on a wire rack until chocolate sets.

Once the pavlova has completely cooled, top with the whipped cream, position the toast triangles upright in the cream, sprinkle 100’s and 1000’s around the cake. Using a grater, shave the remaining chocolate over the pavlova.
