Chris Habib's Crispy Smoked & Glazed Chicken Wings

Serves: 2 - 4

Ingredients

1kg of Chicken wings 

Chicken BBQ Rub / Seasoning. Use your favourite store bought or my simple homemade rub;

  • ½ Cup Light Brown Sugar

  • ¼ Cup of Sweet Paprika

  • 1Tbsp Garlic Powder

  • 1Tbsp Onion Powder

  • 1Tbsp Salt

  • 1Tbsp Crushed Black Pepper

  • 1tsp Cayenne 

  • 1tsp Chilli Powder 

If your not a fan of spicy; leave out the Cayenne and Chiili Powders

1Tbsp of Olive Oil

2 Chucks of smoking fruit wood – Apple, Peach, Nectarine, Cherry are all good options that pair nicely with Poultry.

Glaze for the wings

  • 1 Cup of your favourite BBQ sauce

  • 1/3 Cup of Chicken Stock

  • 1Tbsp of Honey

Method

Preparation

  1. Coat your wings with Olive Oil and place on a tray

  2. Generously Season both sides of your wings with the BBQ rub/seasoning

  3. Get your Smoker/BBQ ready while your wings hang out and start absorbing the flavours of the rub

  4. In a small saucepan; Mix all ingredients for the BBQ glaze on medium heat. Never let it boil! Once its all incorporated keep it warm

The Cook

I’m using a Gateway Drum Smoker for this cook

Running Temp: 163c/325f

Fuel: Firebrand Professional Lump Charcoal + 2 chucks of fruit wood

  1. Once your Smoker is at the right running temp; Place your wings on the grill (I have my grill on the second rack in the gateway drum smoker)

  2. Once 30 min has passed, open the lid and flip your wings

  3. When your wings have been cooking for 60 mins or have reached an internal temp of 165f its time to apply the glaze

  4. Remove the wings from the barbecue, place in a bowl and generously pour over the glaze (make sure the glaze is hot before pouring over the wings)

  5. Serve immediately so you don’t lose that crispness to the glaze. You can place your glazed wings back on the smoker/BBQ to ‘set’ the glaze but you will in turn lose out on a crispier experience.

My mother at the age of 44, lost her battle with bone cancer. I was 16yrs of age at the time. It was devastating to see her rapid decline over a 2yr period.
