Desi Marie Longinidis' Prawn Souvlaki

Ingredients

12 Raw Australian Prawns
-
1 deseeded capsicum cut into 2cm cubes

1 large Spanish onion cut into 2cm cubes
-
4 large pita breads (Greek or Lebanese pita)

Tzatziki dip
-
Greek Salad
Marinade
-
1/4 cup olive oil
-
3 minced garlic cloves
-
2 teaspoons of dried oregano
-
1 teaspoons ground paprika
-
sweet juice of 1/2 a lemon

Season with salt/pepper
Method

Mix together all the ingredients for the marinade in a bowl and add the 12 raw prawns.

Thread 3 prawns, onion and capsicum alternatively on a skewer. (You will need 4 skewers).

Preheat your grill - medium/high

Grill the skewers for 3 - 4 minutes a side or until cooked through.

Remove from grill and cover with foil to keep warm.

Brush the pita bread with a little olive oil and grill for a few seconds on both sides.

Place 1 – 2 tablespoons of tzatziki dip on the pita bread and then some Greek salad.

Add the 1 grilled prawn skewer per pita bread.
