Desi Marie Longinidis' Prawn Souvlaki

Serves: 4

Preparation Time: 15 minutes

Cook Time: 8 minutes

Ingredients

  • 12 Raw Australian Prawns

  • 1 deseeded capsicum cut into 2cm cubes

  • 1 large Spanish onion cut into 2cm cubes

  • 4 large pita breads (Greek or Lebanese pita)

  • Tzatziki dip

  • Greek Salad

Marinade

  • 1/4 cup olive oil

  • 3 minced garlic cloves

  • 2 teaspoons of dried oregano 

  • 1 teaspoons ground paprika

  • sweet juice of 1/2 a lemon 

  • Season with salt/pepper

Method

  1. Mix together all the ingredients for the marinade in a bowl and add the 12 raw prawns.

  2. Thread 3 prawns, onion and capsicum alternatively on a skewer. (You will need 4 skewers).

  3. Preheat your grill - medium/high

  4. Grill the skewers for 3 - 4 minutes a side or until cooked through.

  5. Remove from grill and cover with foil to keep warm.

  6. Brush the pita bread with a little olive oil and grill for a few seconds on both sides.

  7. Place 1 – 2 tablespoons of tzatziki dip on the pita bread and then some Greek salad.

  8. Add the 1 grilled prawn skewer per pita bread.
