Ingredients

Pastry

  • 350 gm plain flour - 350 gm

  • 265 gm margarine

  • 40 gm ground almond

  • 75 gm drinking chocolate

  • 75 gm castor sugar

  • 2 beaten egg yolks

Apple Filling

  • 700 gm cooking apples

  • 1 tablespoon water

  • 50gm sugar

Method

  1. Make apple filling in advance.  Cook until mushy and then allow to cool.  Add sugar.

  2. To make the pastry, put all the pastry ingredients in a food processor and mix until a soft ball has formed.  Wrap in foil and place in fridge for 30 minutes.

  3. Divide pastry into three-fifths and two fifths. 

  4. Leave the three-fifths in the fridge and roll out the two-fifths for the base on a lightly floured board and place on greased enamel plate.  Prick with fork and put in the oven at gas mark 3 (160⁰ C) for about 10-15 minutes until cooked.

  5. When cool, sprinkle castor sugar on the base and add the filling.  Ensure that the filling is not too liquid otherwise the base will be too soggy.

  6. Roll out the lid using the remainder of the pastry.  Divide into quarters because it is very soft and difficult to handle.  Place the quarters on top of the pie.  Make four vents in the lid and pinch down around the edge.  Cook in oven at gas mark 5 (190⁰ C) for about 20 minutes.

  7. Sprinkle with icing sugar before serving.
