Spicy Tomato Florentine

Ingredients

  • 2 garlic cloves, chopped

  • 3 carrots, chopped

  • 5 tomatoes, chopped

  • 2-3 chilies

  • 1 onion, diced

  • Spinach

  • Wholemeal pasta

  • 4 cups chicken stock

  • 2 cups milk

  • 1 cup cream

  • 1/4 cup tomato paste

  • 2 tablespoons flour

  • 1 tablespoon butter/olive oil

  • 1/4 cup parmesan

  • Sriracha

  • Seasoning - salt/pepper

  • 1 tablespoon brown sugar

  • Chilli flakes

  • Coriander

  • Oregano

  • Paprika

Method

  1. Saute onion, garlic and butter

  2. Add carrot, chilli, tomato, brown sugar and flour

  3. Add tomato paste and season with Sriracha

  4. Add cream, milk, stock and then bring to boil. Boil for 1 minute

  5. Reduce to simmer and than add Parmesan. Thicken and simmer

  6. Add cooked pasta and then simmer.

  7. Season with salt, pepper, oregano and paprika

  8. Stir in spinach

  9. Serve with shredded mozzarella and crusty bread
