Spicy Tomato Florentine

Ingredients

2 garlic cloves, chopped

3 carrots, chopped

5 tomatoes, chopped

2-3 chilies
-
1 onion, diced

Spinach
-
Wholemeal pasta
-
4 cups chicken stock
-
2 cups milk
-
1 cup cream
-
1/4 cup tomato paste
-
2 tablespoons flour
-
1 tablespoon butter/olive oil

1/4 cup parmesan
-
Sriracha
-
Seasoning - salt/pepper
-
1 tablespoon brown sugar
-
Chilli flakes
-
Coriander
-
Oregano
-
Paprika
Method
-
Saute onion, garlic and butter
-
Add carrot, chilli, tomato, brown sugar and flour
-
Add tomato paste and season with Sriracha
-
Add cream, milk, stock and then bring to boil. Boil for 1 minute
-
Reduce to simmer and than add Parmesan. Thicken and simmer
-
Add cooked pasta and then simmer.

Season with salt, pepper, oregano and paprika

Stir in spinach
-
Serve with shredded mozzarella and crusty bread
